Salad:
1 cup Quinoa (uncooked)
1 can Chickpeas (drained and rinsed)
1 cup Cherry Tomatoes (chopped)
1 cup Cucumber (diced)
½ cup Carrots (finely chopped)
1 Bell Pepper (diced)
½ Red Onion (finely chopped)
1 bunch Fresh Cilantro (chopped)
Optional: crumbled feta for topping
Lemon-Garlic Dressing:
½ cup EVOO
1 Lemon (juice)
3 cloves Garlic (minced)
½ tsp Oregano (dried)
Salt and Pepper to taste
Rinse quinoa under cold water, then cook according to package instructions. Let it cool completely before using.
Drain and rinse the chickpeas. Chop all vegetables into small, uniform pieces.
In a small bowl, whisk together lemon juice, olive oil, garlic, oregano, salt, and pepper.
In a large bowl, combine cooled quinoa, chickpeas, and chopped vegetables.
Pour the dressing over the salad and toss until everything is evenly coated.
Optional: Sprinkle with crumbled feta and an extra squeeze of lemon before serving.
