Mix the Dry Ingredients: In a large mixing bowl, add the flour. Place the yeast on one side and the fine salt on the other — this prevents the salt from killing the yeast. Mix everything together.
Add Wet Ingredients: Make a well in the center and pour in 2 tablespoons of olive oil. Gradually add 350–400ml lukewarm water until a slightly sticky dough forms (you may not need all the water).
Knead the Dough: Lightly flour your surface, then knead the dough for 5–10 minutes until soft and smooth. Transfer to a clean bowl, cover with a tea towel, and let it rise for 1 hour or until doubled in size.
Second Proof: Oil a 25x35 cm shallow baking tin. Gently stretch the dough to fit the tin. Cover again and let it rise for 35–45 minutes.
Preheat and Dimple: Preheat your oven to 220°C (200°C fan / Gas 7). Press your fingers into the dough to create those classic focaccia dimples.
Add Toppings: Mix 1½ tbsp olive oil, 1 tbsp water, and 1 tsp flaky sea salt, then drizzle over the dough. Press rosemary sprigs into the dimples.
Bake and Serve: Bake for 20 minutes or until golden brown. While still hot, drizzle with 1–2 tbsp olive oil. Slice and enjoy warm or cold with more olive oil for dipping!
