Guiseppe
1 (16 oz) can Greek yogurt
1 med Cucumber (peeled, chopped)
2 cloves Garlic (minced)
1 tbsp EVOO
1 ½ tsp dried Dill Weed
1 tsp White Vinegar
1 tsp Lemon Juice
Salt and Pepper
4 cloves Garlic (minced)
1 medium Lemon (freshly squeezed)
2 tbsp EVOO
1 tbsp dried Oregano
2 tsp Red Wine Vinegar
Salt and Pepper
1 ¼ lb Chicken Breasts (boneless, skinless, cut in strips)
6 Pita (round)
1 medium Tomato (diced)
1 Red Onion (thinly sliced)
½ head Iceberg Lettuce (chopped)
Make the Tzatziki
In a blender or food processor, combine all tzatziki ingredients: yogurt, cucumber, garlic, olive oil, dill, vinegar, lemon juice, salt, and pepper. Blend until smooth. Cover and refrigerate while you prepare the chicken.
Marinate the Chicken
In a large bowl, whisk together garlic, lemon juice, olive oil, oregano, red wine vinegar, salt, and pepper. Add chicken strips and toss to coat evenly. Cover and marinate in the fridge for at least 1 hour.
Cook the Chicken
Preheat your broiler and line a baking sheet with foil. Arrange the marinated chicken strips in a single layer. Broil about 6 inches from the heat source for 2–4 minutes per side, or until the chicken is lightly browned and cooked through. Let the chicken rest for 5 minutes.
Warm the Pitas
While the chicken rests, warm the pita bread in a dry skillet over medium heat, about 1 minute per side, until soft and pliable.
Assemble the Gyros
Lay out a warm pita and fill it with cooked chicken, a generous dollop of tzatziki, lettuce, tomatoes, and red onion slices. Wrap it up and enjoy!
