¼ cup Sour Cream
3 tbsp Blue Cheese Crumbles
1 tbsp Whole Milk
Pinch of Garlic Powder
Pinch of Onion Powder
Pinch of Salt
¼ cup Whole Milk
¼ cup Lager Beer
½ cup All-Purpose Flour
1 tsp Garlic Powder
¼ tsp Onion Powder
½ tsp Baking Powder
¼ tsp Salt
1 small head Cauliflower (cut into florets)
Cooking Spray
2 tbsp Butter (unsalted)
½ cup Bufalo Wing Sauce
6 Celery Stalks (cut into sticks)
Make the Dipping Sauce
In a bowl, mix sour cream, blue cheese crumbles, milk, garlic powder, onion powder, and salt. Stir until smooth, cover, and chill in the refrigerator.
Preheat the Oven
Set your oven to 450°F (230°C). Line a baking sheet with parchment paper or foil.
Mix the Batter
In a medium bowl, whisk together milk, beer, flour, garlic powder, onion powder, baking powder, and salt until just combined.
Coat the Cauliflower
Dip each cauliflower floret into the batter, letting the excess drip off, then place it on the prepared baking sheet. Repeat until all florets are coated.
Bake Until Golden
Lightly spray the florets with cooking spray. Bake for 15–20 minutes, or until golden brown on top.
Add Buffalo Sauce
In a saucepan, melt the butter and mix it with Buffalo wing sauce. Remove the cauliflower from the oven, drizzle half of the sauce over the florets, and bake for another 5 minutes.
Toss and Serve
Transfer the cauliflower to the saucepan and toss until fully coated. Serve hot with blue cheese dipping sauce and celery sticks.
