2 cups Rolled Oats
1 cup Walnuts (chopped)
2 tsp Cinnamon (ground)
¼ tsp Ginger (ground)
¼ tsp Salt
1 cup Apples (diced)
½ cup Applesauce (unsweetened)
½ cup Almond Milk (at room temp)
2 Eggs
¼ cup Maple Syrup
1 tsp Pure Vanilla Extract
¼ tsp Pure Almond Extract
¼ cup Coconut oil (melted and slightly cooled)
Preheat oven to 350°F and grease an 8x8-inch glass baking dish.
In a large bowl, mix together oats, walnuts, cinnamon, ginger, and salt.
Add diced apples, applesauce, milk, eggs, maple syrup, vanilla, and almond extract. Stir until combined.
Stir in melted coconut oil.
Pour mixture into the prepared baking dish and smooth the top.
Bake for 30 minutes, or until the top is golden and the oatmeal is set.
Let cool for at least 5 minutes before slicing. Serve warm with a splash of milk and extra walnuts, if desired.
