For the Rice:
1 cup Basmati rice
1 tsp Oil
½ tsp Salt
Water for soaking & boiling
For the Stir-Fry:
2 tbsp Oil
2 Garlic cloves (finely chopped)
½ medium Onion (chopped)
4 tbsp Spring Onions (chopped, divided)
¼ cup Carrot (chopped)
2 tbsp Cabbage (chopped)
2 tbsp Green Peas
5 Green Beans (chopped)
¼ Capsicum (chopped)
2 tbsp Soy Sauce
1 tbsp Vinegar
1 tsp Black Pepper (crushed)
¼ tsp Salt (adjust to taste)
Rinse and soak 1 cup basmati rice for 20 minutes.
In a large pot, boil 6 cups of water with 1 tsp oil and ½ tsp salt.
Add soaked rice and cook until just tender (approx. 10 minutes).
Drain and rinse with cold water to stop cooking. Spread out to cool completely.
Heat 2 tbsp oil in a large wok or pan over high heat.
Sauté garlic for 30 seconds until aromatic.
Add onions and half the spring onions; stir-fry for 1–2 minutes.
Toss in carrots, cabbage, peas, beans, and capsicum. Cook for 3–4 minutes, keeping them crunchy.
Pour in soy sauce and vinegar. Mix well.
Add cooked rice, crushed pepper, and salt. Stir-fry on high heat for 2–3 minutes until combined.
Garnish with remaining spring onions and serve hot.
