1 tbsp Rapeseed Oil
2 pcs Red Onions
300 g Kale
300 Wholemeal Penne Pasta
4 tbsp Soft Cheese
4 tbsp Jar Pesto
Sauté the onions and wilt the kale. In a large pan, heat the oil over medium heat. Add the onions and cook for about 10 minutes, stirring occasionally, until soft and lightly caramelized. Add the kale and 100ml of water, then cover and cook for another 5 minutes, or until the kale is wilted and tender.
Cook the pasta and combine. Meanwhile, cook the pasta according to the package instructions. Drain the pasta, reserving a small cup of the cooking water. Add the cooked pasta to the pan with the onions and kale. Stir in the soft cheese and pesto, mixing well until creamy. If needed, add a splash of the reserved pasta water to loosen the sauce. Season to taste with salt and pepper.
