2 tbsp Butter
1 small Onion (chopped)
1 stalk Celery (chopped)
1 medium Carrot (chopped)
2 med Potatoes (cubed)
1 med Butternut Squash (peeled, seeded and cubed, about 3 cups)
32 oz Chicken Stock
Salt and Pepper
Sauté the Veggies
In a large pot, melt butter over medium heat. Add the chopped onion, celery, carrot, potatoes, and squash. Cook for about 5 minutes until the veggies start to soften and brown slightly.
Simmer the Soup
Pour in enough chicken stock to just cover the vegetables. Bring the soup to a boil, then reduce the heat to low. Cover the pot and simmer for 35–40 minutes, or until all the vegetables are fork-tender.
Blend Until Smooth
Carefully transfer the soup to a blender and puree until smooth (or use an immersion blender right in the pot). Add remaining stock to adjust thickness, if needed.
Season and Serve
Return the soup to the pot, season with salt and black pepper to taste, and heat through. Serve hot with crusty bread or a swirl of cream.
