1 lb Chicken Breast Halves (boneless, skinless,cubed)
1 cup Carrots (sliced)
1 cup Green Peas (frozen)
½ cup Celery (sliced)
⅓ cup Butter
⅓ cup Onion (chopped)
⅓ cup All-Purpose Flour
½ tsp Salt
¼ tsp Black Pepper
¼ tsp Celery Seed
1 ¾ cups Chicken Broth
⅔ cup Milk
2 (9-inch) Pie Crusts (unbaked)
Cook Chicken and Vegetables. In a saucepan, combine the cubed chicken, carrots, peas, and celery. Add enough water to cover. Bring to a boil and cook for 15 minutes. Drain and set aside.
Make the Sauce Base. While the chicken cooks, melt butter in another saucepan over medium heat. Add onion and cook until soft and translucent, about 5 to 7 minutes. Stir in flour, salt, pepper, and celery seed to make a roux.
Add Broth and Milk. Slowly whisk in the chicken broth and milk. Reduce heat to medium-low and simmer, stirring frequently, until the sauce thickens, about 5 to 10 minutes. Remove from heat.
Assemble the Pie. Place the cooked chicken and vegetables into the bottom pie crust. Pour the hot sauce mixture evenly over the filling.
Top and Seal. Cover with the top crust. Seal the edges by pinching and trim any excess dough. Cut several small slits in the top crust to allow steam to escape.
Bake. Preheat your oven to 425°F (220°C). Bake the pie for 30 to 35 minutes, or until the crust is golden brown and the filling is bubbly.
