3 ½ oz Dark Chocolate (62% cacao recommended)
1 tbsp Butter (unsalted)
2 large Egg Yolks
1 tbsp White Sugar
¼ cup Water (or substitute part with coffee/rum for extra flavor)
1 pinch of Salt
½ cup Heavy Whipping Cream (chilled)
Prepare the Chocolate Base
Chop the dark chocolate and set aside with the butter.
Cook the Egg Mixture
In a heatproof mixing bowl, whisk together egg yolks, sugar, water, and salt.
Place over medium-low heat and whisk continuously until the mixture is hot (145–150°F) and foamy.
Melt Chocolate into Egg Mixture
Remove from heat and whisk in chocolate and butter until smooth.
Let cool to room temperature, whisking occasionally.
Whip the Cream
In a separate chilled bowl, whip the heavy cream until medium peaks form. Don’t overwhip—cream should be smooth, not grainy.
Fold Mixtures Together
Gently fold one-third of the chocolate mixture into the whipped cream.
Carefully fold in the rest, keeping the mousse light and airy.
Chill and Serve
Divide into 4 serving cups or ramekins.
Cover and refrigerate for at least 1 hour before serving.
