4 large Bell Peppers
1 lb Ground Beef
1 small Onion (finely chopped)
2 cloves Garlic (minced)
1 cup Cooked Rice
1 ½ cup Tomato Sauce (divided)
1 tsp dried Italian Seasoning
Salt and Pepper
1 cup Mozarella (shredded)
Prep the Bell Peppers. Cut the tops off the bell peppers and remove the seeds and membranes. Bring a large pot of water to a boil. Add the peppers and boil for 3–4 minutes, just until slightly softened. Drain and set aside.
Cook the Filling. In a skillet over medium heat, cook the ground beef until browned, about 5–7 minutes. Add chopped onion and garlic, and cook for 2–3 more minutes until softened. Stir in the cooked rice, 1 cup of tomato sauce, oregano, salt, and pepper. Cook for another 2–3 minutes, stirring to combine.
Stuff the Peppers. Preheat your oven to 375°F (190°C). Place the peppers upright in a baking dish. Spoon the beef and rice filling into each pepper, pressing down gently to pack them.
Spoon the remaining ½ cup of tomato sauce over the tops of the stuffed peppers.
Bake and Add Cheese. Cover the dish with foil and bake for 30 minutes. Remove the foil, sprinkle cheese on top of each pepper, and bake for another 5–10 minutes, until the cheese is melted and bubbly.
Serve. Let cool slightly, then serve warm. These stuffed peppers pair well with a simple green salad, roasted vegetables, or crusty bread.
