1 onion, quartered
Fresh bay leaves (for flavor and garnish)
4.5–5.6 kg (10–12 lb) Bronze turkey, giblets removed
1 batch of stuffing (optional)
85 g butter, softened
1 whole nutmeg (for grating)
10 rashers streaky bacon
1 glass red wine (such as Merlot)

Directions

Preheat oven to 190°C / fan 170°C / gas 5. Place the quartered onion and a large sprig of bay in the cavity. If using stuffing, fill half into the neck end and secure the neck skin with skewers. Tie the turkey legs together neatly.
Weigh the turkey and allow 20 minutes per kilo, plus 90 minutes total cooking time.
Place a large sheet of foil in a roasting tin and set the turkey on top. Rub the breast with softened butter, grate over half of the nutmeg, and season well. Cover the breast with bacon slices, pour the red wine over, and wrap loosely with foil to form a sealed parcel.
Roast the turkey in the oven. About 90 minutes before the end of cooking, open the foil, remove the bacon, and drain off excess fat. Leave the foil open and baste the turkey with its juices occasionally. Add pigs-in-blankets and any extra stuffing 30 minutes before the end.
Insert a skewer into the thickest part of the thigh; the juices should run clear. If pink, roast for another 15 minutes and test again.
Transfer the turkey and sides to a platter. Cover with foil and tea towels, resting for up to 30 minutes before carving. Garnish with bay leaves and serve warm.
