1 lb Bacon
10 Tortillas (10 inch)
10 Eggs
16 oz Refried Beans
8 oz Cheddar Cheese (shredded)
Cook the Bacon. In a large skillet, cook the bacon over medium-high heat until crisp and evenly browned. Drain on paper towels and set aside.
Warm the Tortillas. Wrap the flour tortillas in foil and place in a warm oven (about 250°F / 120°C) to heat while you prep the other ingredients.
Fry the Eggs. In a greased skillet, fry the eggs to your desired doneness (firm or slightly runny yolks). You can also scramble them if you prefer.
Heat the Beans. In a small saucepan over low heat, warm the refried beans, stirring occasionally until hot and smooth.
Assemble the Burritos
Lay a warm tortilla flat and layer with:
2 tablespoons of refried beans
2 strips of bacon
1 fried egg
A sprinkle of shredded cheddar cheese
Roll and Serve. Roll the tortilla into a burrito, tucking in the sides as you go. Serve immediately with salsa, hot sauce, or avocado slices if desired.
