I often make Bresaola, which is Italian air dried beef. In its finished state it is very hard and needs to be sliced paper thin. My first meat slicer (Rival) didn't have the power and was difficult to clean, though not impossible. My second meat slicer (Kalorik) had the power, but was not possible to clean at all, unless one was prepared to disassemble the entire unit, screwdriver, nut drivers, and all. Also it couldn't really slice paper thin. Chef's Choice 615 has the power, is easy to clean, and slices paper thin (with the non-serrated blade). Excellent product. When the unit arrived, it had a minor problem with the carriage. Kitchen Niche took care of it promptly and efficiently. I highly recommend the slicer as well as dealing with Kitchen Niche.
